🍁Pumpkin Bread Time 🍂

My sleepy little fella who was anxiously awaiting fall looked up at me with his big brown eyes and said, “Mom- is it time for pumpkin bread? Seems like it is. Can you please make some?”

So I did… and between football (Go Panthers – woot woot!), nutmeg and cinnamon spiced, baked goodies- fall is officially here in our house! Yum!

I have about 3 different pumpkin bread recipes I turn to, but this one below is pretty yummy, and omits eggs and all the oil and offers a much more healthy ingredient list.

Yummy Pumpkin Bread goes a little like this...

  • 3 1/2 cups all-purpose unbleached organic flour- I like King Arthur Organic (the whole wheat flower is nice too!)
  • 2 cups well packed dark brown sugar- Get this goodness at Whole Foods or Target (Wholesome brand at Target).
  • 2/3 cup organic pure cane sugar– Woodstock or Whole Foods 365 brand is A-ok!
  • 2 cups organic pumpkin puree– My favorite is Farmer’s Market
  • 1/2 cup organic applesauce– Whole Foods Brand is good
  • 2/3 cup coconut milk– Native Forest is nice!!
  • 1/4 c. Chobani Pumpkin Yogurt (Vanilla if not in season)
  • 2 teaspoons baking soda– I use 365 from Whole Foods
  • 1 teaspoon salt
  • 2 &1/2- 3 tsp. Pumpkin Spice-I use spices from Spice Island and/ or Whole Foods when possible
  • 1cup semi-sweet chocolate chips -if you need even more deliciousness!
  • 1 cup confectioner’s sugar- preferably organic
  • 1-2 tblsp. organic butter
  • 1-2tblp. organic milk

Mix all the wet ingredients together well. Then fold into the flour and mix well until all ingredients are combined.

Pour into two loaf pans, dividing batter equally. Then Bake at 350º about 60 minutes. I usually check mine at 45 mins and place a foil tent over the top so that it doesn’t get too brown.

Once baked to perfection- remove from oven and let cool. Then drizzle with frosting:

For The Frosting: Mix 1 C. organic confectioner’s sugar with 1tbls. melted butter and 1tbls. milk. Add just a little vanilla flavoring and mix until you have a thick, but pourable frosting. You may need to adjust for consistency by adding more confectioner’s sugar or milk to get it where you want it. I then take a fork and dip into the frosting and then drizzle it all across the bread, with no rhyme or reason, until all the frosting is gone. I often add some sprinkles too just for the added delight of my children.

Yeah! You did it! Now slice, eat and enjoy with a cold cup of milk or a steamy Chai Tea!
